If you uncheck a product or an item, the line will be excluded from tax calculation.
The bottom section summarize a document, where you can find the fields such as subtotal, tax, transportation, total, paid, total due. All these fields are calculated using Excel formula, except 'transportation' and 'paid' -- these two fields are manually editable.
